Greek Koulourakia Recipe

This authentic and delicious Greek twist cookie is commonly baked around Easter and Christmas to symbolize joy and new beginnings.

Equipment

  • 1 hand mixer Can probably use a kitchen aid mixer as well
  • 1 large stainless steel bowl
  • 1 Kitchen Scale
  • 2 baking sheets
  • Parchment Paper

Ingredients
  

  • 560g flour
  • 2 eggs
  • 180g lard
  • 230g white sugar
  • 90g pulp-free orange juice
  • 6g baking powder
  • 2 tbsp milk
  • 2 tsp vanilla extract
  • 1 egg for egg wash

Instructions
 

  • Combine all the ingredients into a stainless steel bowl and beat with the hand mixer until well combined and create soft dough shape.
  • On a floured surface, knead the dough until you've reached a playdough-like consistency.

  • Place dough back into the bowl and cover to let rest for at least 30 minutes.
  • Preheat oven to 350℉.
  • Take dough out on a NON floured surface and cut into 4 sections, place 3 sections back in covered bowl and start working on first section.
  • Roll the first section of the dough into a long log (approximately 1.5 feet). Cut the log in half. You should now have 2 logs. the same length and size. Cut each log into 6 pieces. (You can cut it into 8 or even 9 pieces to make more smaller cookies - up to you).
  • Roll out each individual piece into a small log (or as my daughter calls it a snake), that's about 8" long. Grab one end and bring it to the other end piece. The log should be parallel to each other and not touching. From there, grab the two end pieces in one hand and the top bend of the log with the other, and twist the dough 2-3 times.

  • Once the cookie is twisted, place on the parchment paper on the baking sheet. Give a good amount of space between each cookie as it will puff up during the baking process.
  • Make an egg wash using one egg and a basting brush. Coat the top of each cookie with the wash to get the golden brown colour. Bake in preheated oven for 13-15 minutes, until they are golden brown.
