Step 1: Prepare

After greasing the loaf pan, prepare the apples in a small bowl by peeling, coring and dicing them into small pieces, coat the apples in the cinnamon and white sugar, side aside. Then in another bowl, whisk together brown sugar and cinnamon together, that that aside.

Step 2: Mix The Batter

Cream together sugar and butter in an electric mixture until light and fluffy. Then beat in eggs and vanilla until it’s just combined.

Step 3: Dry and Wet Ingredients

In a small mixing bowl, whisk together the flour and baking powder. Add the flour mixture to the wet mixture and stir until combined. Add the milk and mix until smooth.

Step 4: Combine The Batter and Apples

Add 2/3’s of the spiced apples to the batter, mix until combined. Add that into the prepared loaf pan.

Step 5: Bread Topping

With the last 1/3 of apples, cover the top of the loaf, then sprinkle the cinnamon and brown sugar mixture as the bread topping.

Bake at 350F for 1 hour, then allow to cool in pan for 30 minutes.

Ingredients
  

Apple Filling

  • 2 cups peeled and diced apples 200g
  • 1 tsp cinnamon
  • 1 tbsp white sugar

Bread Topping

  • 1/4 cup brown sugar
  • 1 tsp cinnamon

Bread

  • 1/2 cup butter 113g
  • 2/3 white sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 3/4 cups flour 210g
  • 2 tsp baking powder 10g
  • 3/4 cup milk

Glaze

  • 1/2 cup powdered sugar
  • 1 tbsp milk

Instructions
 

  • Preheat oven to 350F. Prepare an 8.5×4.5×2.5-inch loaf pan by greasing it with non-stick cooking spray or butter.

  • Peel and dice apples, place into a bowl and add cinnamon and white sugar. Coat apples then set aside.

  • In a large mixing bowl, use an electric mixer to cream together the 2/3 cup granulated sugar and butter until light and fluffy. Beat in the eggs and vanilla, just until combined.
  • In a small mixing bowl, whisk together the flour and baking powder. Add the flour mixture to the wet mixture and stir until combined. Add the milk and mix until smooth.
  • Add 2/3 of the apple filling to the batter bowl, mix until just combined.
