Every fall, our freezer starts filling up with homemade pumpkin purée.
After growing pumpkins all summer, curing them so they’ll last for months, and roasting a few for purée, I always end up wondering what to make next. Pumpkin pie is great, but I don’t need five of them sitting on my counter.
These pumpkin oatmeal bars have become one of our favourite ways to use that extra pumpkin.
They’re soft, filling, naturally sweetened with honey, and packed with oats, flax, hemp hearts, and pumpkin purée. The chocolate chips make them feel like a treat, but they’re hearty enough for breakfast.
I’m not much of a breakfast person, so I usually bake a pan on Sunday, cut it into bars, and keep them in the fridge for quick breakfasts all week. Most mornings I grab one and eat it with Greek yogurt, but they’re just as good on their own.

What Makes These Pumpkin Oatmeal Bars Healthy?
I like sneaking a few extra nutrients into recipes whenever I can. Hemp hearts and ground flax seed disappear into these bars without changing the flavour, while adding protein, fiber and healthy fats. They’re completely optional, but if you already have them in your pantry they’re worth including.
Hemp seeds are:
- high in protein
- healthy fats and fiber
- good source of calcium, iron, potassium, zinc and magnesium.
Flax seeds are:
- high in omega-3 fatty acids,
- high in fibre
- aid in heart and digestive health
- can improve blood sugar control.
It’s for these reasons and more that we add these super useful seeds into our baking!

Ingredient Notes
Some main ingredients we usually get questions on, I thought I’d explain my reasoning.
Pumpkin Purée
Homemade or canned pumpkin purée both work well in this recipe. We usually use homemade because we grow our own pumpkins each year and freeze the purée in portions, but canned pumpkin gives the same texture and flavour.
Oats
Quick oats create softer pumpkin oatmeal bars, while rolled oats make them a little heartier. I prefer quick oats because they hold together better once the bars have cooled.
Hemp Hearts & Flaxseed
These are an easy way to add extra protein, fiber, and healthy fats. They blend into the bars without changing the flavour, so they’re a simple nutritional boost.
Chocolate Chips
The chocolate chips balance the pumpkin and spices without making the bars overly sweet. Feel free to add a little more or less depending on your preference.
Ingredient Substitutions & Variations
The beautiful thing about this dish is the ability to be creative and expand once you’ve tried it. Here are some quick substitutions:
- Pumpkin -> swap with butternut squash or sweet potato
- Honey -> swap with maple syrup
- Eggs -> swap with flax eggs
- Milk -> swap with a dairy-free alternative
As for variations – the sky is the limit. I added more pumpkin spice and some ground almond the last time. Just be weary of the wet to dry ingredient ratio – you want the mixture to be wet but thick.

Chocolate Doesn’t Automatically Mean ‘Bad’
I feel like chocolate has been given such a bad rap – yes it’s not the best food to eat, but it’s also not the worst. Eating a homemade pumpkin oatmeal bar with no sugar added but it includes chocolate chips is much healthier than eating a muffin from the coffee shop.
The chocolate is the sweetness kick the recipe needs, you can add as much or as little as you like – but when you realize the recipe calls for oatmeal, milk, honey, eggs, pumpkin puree, hemp hearts, flax seeds and chocolate chips, you realize there’s more whole foods in there than any quick breakfast meal you can find at the store or a coffee shop.
Storage
When I meal prep this recipe for the week, I will place the pumpkin oatmeal bars into a container and leave in the fridge for up to 5 days.
However, if I’m making a big batch, I’ll wrap the remaining bars in parchment or wax paper, and then add to a freezer bag to store for months.
When I’m ready, I’ll take out the bars I need and let it thaw out overnight in the fridge and just reheated it in the microwave the next morning. A quick and easy breakfast!

Pumpkin Oatmeal Bars
Equipment
- 1 9×9 casserole dish
- 1 Large bowl
Ingredients
- 2 cups rolled oats
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup pumpkin puree
- 1 1/4 cup milk
- 2 large eggs
- 2 tsp vanilla
- 1/3 cup honey
- 1/4 cup flax seeds more or less depending on preferences
- 1/4 cup hemp hearts more or less depending on preferences
- chocolate chips
Instructions
- Preheat oven to 375 F degrees and grease 9×9 casserole dish with oil (any type of oil)
- In a bowl combine oats, pumpkin pie spice, baking powder and salt, mix to combine.
- Add pumpkin puree, milk, eggs, vanilla, honey, hemp hearts, flax seeds and 3/4 of your chocolate chips to the bowl. Stir and combine well.
- Spread mixture into the casserole dish and add remaining chocolate chips on top. Bake for 30-35 mins. Oatmeal is done when it is puffed on the edges, set in the middle and the top is golden.
- Let cool for 5 minutes before slicing into bars. It will be soft fresh out of the oven, but will firm up as it cools. Let cool completely and store in fridge for up to 4 days. Freeze for months if securely wrapped.
